Yes, keeping the legs bent for the scissors is definitely a great modification. To build up to the whole series of 5 in a plank, I would add one exercise at a time (only the single bent for a week or so, then add the the double leg bent and so on...)
That gives time to the body to build strength, improve the quality of the execution (and waisting less energy) and build endurance as well.
